Ipso Facto is Latin for ‘by the fact itself’, essentially meaning it is what it is, and what it is that I am trying to make is a wine which is a reflection of both the vineyard and my winemaking philosophy.
As much as wine is a natural product there are many decisions to be made, and the wine that results does so as a consequence of these decisions. What fruit to use, when to pick, fermentation vessel, temperature, time in oak & when to bottle. In making these decisions I am aiming to make interesting, elegant and complex wines, which people will enjoy now and in the future.
